There are many NC State employees who do not get the credit they deserve for their hard work, but there is one individual in particular who not only does not get enough credit for her hard work but also holds a position many students and faculty do not even know exists.
Lisa Eberhart is NC State’s campus dietitian, and while this may not seem like the most important job on campus she does a great deal of good for us. Since most people do not know of her services, I contacted her and got an in-depth outline of all of her duties.
Eberhart and her graduate student interns are available for free one-on-one nutrition consultations or you can submit a question through University Dining’s “Ask the Dietitian.”
She has everything on campus analyzed down to the ingredient level so we all know what is in our food. You can check this by going to the campus dining hall website or by using one of the on-site iPads. The campus mobile app also provides nutrition and allergen information.
Her office offers free health tours of the dining halls, C-stores and food services operations. Classes on simple dorm-room cooking are also available.
Part of her job is to make sure we have healthier options at all the dining locations. She is at the meetings when the menu is decided and also makes sure that there is a “Dietitian’s Dish” which is a healthier option at every meal every day.
Eberhart also informed me that this past fall NC State was named the first school in the country to meet all the criteria for the Partnership for a Healthier America Healthier Colleges Program. This is a program was started by first lady Michelle Obama. NC State had to meet many requirements in order to achieve this, and to her knowledge, NC State is still the only school to do that.
With better promotion of her services NC State has a chance to become a much healthier school.
